A FEW DAYS IN PICTURES!

I hope you’re all enjoying your weeks so far!
So, because my blogging has been a little bit inconsistent lately I thought I would get “caught up” by just posting all of the pictures I have on my camera that haven’t yet made it to you!
Nothing too exciting but some of my eats over the past few days!

This was my first time trying this chili. It was FANTASTIC!
The bf agreed and couldn’t even tell that the “Meat” was Tofu! Score!

Moving On …
I took Sunday and Monday off of exercise because I was (am) feeling pretty exhausted.
I’m very proud of myself because I don’t feel guilty about it at all!
I needed the rest and listened to my body.
However, I plan on getting back on track tonight with a run! I can’t wait!

Running – Slowly
Afternoon Everyone!
I have NO pictures for you today! I’m so sorry!
The batteries for my camera are dead and I was so busy yesterday that I forgot to charge them!
They’re plugged in now so hopefully I’ll have some pictures for you later tonight!
Last night I went for a RUN!
We finally had nice weather and I couldn’t wait to get outside after work!
It was the longest I have run so far – 6KM!!
Time: 36:35
Time/KM: 6:05
Max HR: 199
Avg HR: 182
Calories Burned: 372
My lungs felt 100% through the entire run! In terms of my cardiovascular health – I could run for days!
But by the end my KNEE was KILLING ME!
It is still sore today! Really sore actually!
I’m going to take today off to rest!
Perhaps my workout tomorrow will be on the elliptical!

Eat Fresh – Make Subs @ HOME!
Good Afternoon Everyone!
I hope you’re all enjoying your Wednesday.
I feel like the week is just beginning because I don’t have another day off until Sunday.
I’m really not complaining though because I get an extra day off to spend with my family over Easter!
I’m so excited to go home and visit!
The weather here is fantastic and I’m so glad I skipped my workout this morning when it was –5 out!
Now I will have the energy to get a run in tonight when it is +11!!!
I think I’m really going to enjoy running in the spring, summer and fall months!
Perhaps I will invest in a treadmill for next winter.
That way I could alternate between running and the elliptical.
We’ll see I guess!
So let’s rewind to last night …
I went to the grocery store to pick up a few dinner ingredients and DIDN’T BUY ANY BANANAS!
Aren’t you proud of me? I sure am!
The guy was putting out fresh stock and everything – but I resisted!
I missed them this morning but that’s not important right now!
Back to last night!
The bf and I were going to grab Subway but decided to make our own instead!
1. Because it’s cheaper
2. Because it’s fresher and better tasting!
The Toppings:
Mine was made with:
- Extra Lean Oven Roasted Turkey
- Spinach
- Cucumber
- Orange Peppers
- Tomato
- Hot & Zesty Pickles
- Mustard & Hummus
all on a Whole Wheat bun!
It was sooooo good!

And YES I ATE THE WHOLE THING!
The bf made his with a few different types of meat and LOTS OF MAYO!
He ate this one and ANOTHER ONE just like it!
Don’t you wish you could eat like a man?! I sure do!

BONUS!!!!
Good Afternoon Everyone!
Wow – what a day! I’m pretty happy because I just surpassed my plan at work will be getting a bonus this month! Yay!
I’ll tell you something though – I wasn’t such a happy camper this morning!
I just couldn’t get going.
My workout was WEAK:

I just couldn’t get my heart rate up today! I felt like I was in slow motion.
Oh well, the rest of the week is supposed to be nice and warm so maybe I will finally get out for a run!
After I worked out I really wasn’t feeling up to coming to work.
But I made it here and I’m so glad because I wouldn’t have made my bonus from the couch!
The Green Smoothie made a return today!
I actually felt much better after I drank it!
I have decided that I will not be buying any more Bananas until all of the fruit in the house is gone.
I did miss it in my smoothie today.
But in an effort to not waste anything I will tough it out!
I used 1 Cup Soy Milk as a TREAT!
I actually think I prefer just using Water?!?
Ok, so last night the bf played two games of hockey and wanted some pasta as fuel!
He whipped up his specialty!
It was soooo good!
Later, while I watched John & Kate plus 8, I snacked on Hummus and Tortilla Chips!
I ate way too many of them and felt pretty crappy about it afterwards … but today is a new day and I’m not going to let a little snack get me down!

Homemade Pancakes
Hey Everyone!
I didn’t post yesterday – and I don’t really have an excuse.
I worked, but I probably could have fit it in!
I’m a bad blogger and I’m sorry!
I know that my readers are a wonderful group and will forgive me … right?
I hope you’ve all been enjoying your weekends!
I woke up to SNOW today? Can you believe that?
I thought winter was OVER! I guess not!
Most of the snow has melted already – thank goodness!
I wanted to start the day off with a run but the sight of all the cold white stuff made me lose all motivation – to get outside anyway.
I’ve actually been quite productive around the house!
And there is always later in the afternoon when the temperature creeps a little bit closer to 0 degrees for running!
I started my day with a wonderful breakfast!
Peanut Butter & Banana on Flax Toast!
Yumm!
Once the bf woke up it was already time for my LUNCH! He likes to sleep in!
So I decided to whip up some homemade pancakes – at his request.
I used a recipe I found in my Betty Crocker Cookbook!
The Ingredients:
- 1 Large Egg
- 1 Cup Whole Wheat Flour
- 3/4 Cup Milk
- 1 Tbs Granulated or Packed Brown Sugar
- 2 Tbs Vegetable Oil
- 3 Tsp Baking Powder
- 1/4 Tsp Salt
Butter, Stick Margarine or Shortening – Just to grease the pan.
Step 1: Beat egg in medium bowl with hand beater (I’m a champ and mixed by hand) until fluffy.
Beat in remaining ingredients except butter just until smooth.
I added Strawberries to the mix as well!
Step 2: Heat griddle or skillet over medium heat. Grease griddle with butter if necessary.
Step 3: For each pancake, pour slightly less than 1/4 cup batter from cup or pitcher onto hot griddle. Cook pancake until bubbly on top, puffed and dry around edges. Turn and cook other side until golden brown.
I tried to get a picture of the final product but of course my camera crapped out!
I took the last two and thankfully all of the butter was gone from the pan by that point! I topped mine with more strawberries and a few blackberries!
I thought they turned out really well!
The bf liked them too, although stated that he probably would have liked them more if I had used White Flour.
Not happening!
Ok, so I have seriously been writing this post on and off since I woke up this morning!
I decided that getting outside for a run just wasn’t happening today so I hopped on the elliptical instead.

Workout: Elliptical Resistance 10 (max)
Time: 40:01
Max HR: 173
Avg HR: 159
Calories Burned: 317
I was RIDICULIOUSLY SWEATY today! If I had been at the gym people would have moved off of the machines next to me! Eww I know – but so good!
I’m working 6 days this week so I won’t have another day off until Sunday, so I have lots of stuff to do around the house to prepare for the week.

Mission Accomplished!
Afternoon All!
This morning I completed a sweaty 32 minutes of Power Stride #7 on my elliptical!
I don’t have my stats though because I erased them from the screen on my HRM. UGH!
I was so angry! I don’t know how to get them back!
Oh well, I worked hard! That is all that matters.
Green Smoothie Challenge COMPLETE!
Today was Day 14 for me! It went a little something like this:
Today’s was especially tasty! Or maybe that was the sweet taste of SUCCESS!
I am FOR SURE going to continue to drink Green Smoothies even though this challenge is over!
I have really grown to like them with both Soy Milk and Water!
My digestion has improved along with my hair, skin and nails!
I feel like I think more clearly and my mood has improved!
For these reasons I will continue to include it in my diet!
However, I’m probably not going to always drink it for breakfast and I won’t hesitate to skip a day if I’m just not feeling Green for some reason!

The Agenda!
Good Evening Everyone!
So sorry about the late post! As I said last night – today was a day off for me and I guess I just got caught up in the freedom!
I really didn’t get too much accomplished from the list I posted yesterday but I did manage to do the following:
8:00-11:00 – Relaxed and watched television
I sipped Green Tea accompanied by a new Soy Yogurt I found at Farm Boy yesterday! Yummy!
This Strawberry yoso Soy Yogurt was FANTASTIC!
I had never tried Soy Yogurt before and was slightly nervous that it wouldn’t taste good.
Although there is an obvious Soy Flavour, I enjoyed it a lot! It was creamy, sweet and tasted very natural!
I’m so happy that I found this because I’m trying to cut down on the amount of dairy I eat – mainly for my skin – but I don’t want to give up yogurt all together because I love it so much!
The best part – yoso is a Canadian Company! It is always so thrilling for me to find great products that were made here!
Each container has 150 Calories, 5 grams of protein and 20% of you daily Calcium recommendation! I’m a fan!
If you’re in Canada the yoso site lists all of the stores where you can buy their product!
I’m so excited to try the other yoso products! They have Sour Cream, Spreads and Beverages! I’ll report back!

11:00-12:45 – Got ready, read blogs, cleaned my office
12:45 – 1:00 – Travel to arena
1:00 – 2:00 – Skating!
I didn’t even think about it but it is March Break here. The arena was packed with kids today!
Although it was fun, it was harder to get a great speed going because I was busy trying not to run anyone over!
We skated for an hour!

It has totally changed my workouts for the better!
2:00 – 2:15 – Travel to the bf’s parents place.
2:15 – 4:15 – The bf’s Dad looked at my car and figured out why the “Check Engine” light is on and then we visited.
I’m told the problem isn’t serious but that I should keep an eye on how the car is running!
Thank goodness I don’t have to take it to the shop!
4:15 – 4:30 – Travel to Loeb
4:30 – 5:00 – Picked up a few things for dinner tonight
Just scroll down for dinner!
5:00 – 5:05 – Travel home
5:00 – 7:00 – Unpacked Groceries, Put laundry in, Green Smoothie Snack, NAPPED!
I was pretty hungry by the time I got home and this smoothie filled me up until dinner!
7:00 – 8:00 – Made and ATE DINNER!
Tonight’s ENTIRE Dinner was done on the BBQ!
BBQ Pork Chop, Baked Sweet Potato, Veggies
We took the leftover veggies from last night and drizzled with 1 Tbs of EVOO and dashed some black pepper on top!
Wrapped them in tin foil and plopped them on the BBQ!
Along with two Sweet Potatoes and 3 Pork Chops:
20 Minutes later and Voila!
I topped my Sweet Potato with Cottage Cheese, Parsley and Black Pepper.
I drizzled heated Memories of Lyon Sauce on my Pork Chops! It was good and Spicy!
A fantastic and easy dinner!
The best part about BBQ is that there are less dishes to clean up after!!!
That brings us to NOW ….
I think I will head downstairs, switch some laundry over and do more relaxing now!
What a tough life! Ha!

Evening Everyone!
I just finished eating the yummiest dinner!
First let me start by saying that I stopped by Farm Boy tonight on my way home, for some fresh produce and I’m so glad I did because I couldn’t help but notice the beautifully fresh Atlantic Salmon they had on sale! I picked up two fillets to center tonight’s dinner around!
This meal was so simple and quick yet tasted like I had worked on it for hours! PERFECT!
It was a major hit with the bf – and he is a pretty harsh critic!
Lemon & Black Pepper Pan Fried Salmon with Vegetable Stir Fry
Cut all of your Stir Fry Vegetables – Red Pepper, Yellow Pepper, Green Beans, Green Onion. Throw your veggies in the wok drizzled with a bit of EVOO, dusted with Black Pepper, Parsley and Oregano. Fry on medium heat while your fish cooks.
Take a few of the Green Onions along with half a White Onion Chopped, a “glug” of EVOO, a dash of Black Pepper and a few Lemon Slices – start heating these in your frying pan.
Rinse your Salmon with cold water.
Place your Salmon in the frying pan. Squeeze the juice of half a lemon on the fillets.
Top with lemon slices and black pepper. Cover and let simmer on medium heat for approximately 20 minutes. Flip only once at the 15 minute mark.
That’s IT! You’re done! Top fish with a Slice of Lemon, Parsley and Black Pepper! Serve with your Vegetable Stir Fry!
Enjoy!
Tonight we enjoyed our meal with a piece of crunchy and warm Flax Bread!
I even put a Lemon Wedge on our Water! How very Martha Stewart of ME! Haha!
Salmon is probably one of my favorite things to make and eat! What about you guys?

There are a few arenas in the city that keep their ice all year – we’ll have to figure out their schedules so we can take advantage of this FREE activity!

- take my car to the bf’s dad to figure out why the check engine light is on
Something tells me not everything on this list will get done because I also want to …
- relax and do nothing
